Something didn't quite work with the cupcakes. They were delicious, but didn't have enough structure, so all the rhubarb fell to the bottom and they never quite cooked all the way through even though I left them in for about twice as long as she says. Next time I would change the order of mixing the ingredients.
The frosting on the other hand, was delightful and perfect. Just slightly sweet with a subtle rhubarb flavor. I had to add a couple drops of food coloring to get the right color.
